发糕是华人传统的蒸糕。每逢过节,或祭拜祖先时必备的糕点。

Huat Kuehs are usually eaten during festive season like Chinese New Year or as an offering item for customary ancestral prayers.
Use the Fermentation mode in Thermomix to make these traditional Chinese steamed cakes easily.
Watch the video where cooking instructor, Annie Neo, will guide us through the entire process, using the Thermomix, to make these pillowy soft traditional Chinese steamed Huat Kuehs (also known as fatt ko or Prosperity cakes in Cantonese).

 

Purple Riceberry Huat Kueh

Ingredients

  • 75 g Purple Riceberry
  • 900 g water
  • 5 g dried yeast powder
  • 225 g plain flour
  • 125 g caster sugar
  • 1 egg
  • 10 g baking powder
  • 50 g thick

 

Preparation

  1. Place purple riceberry in mixing bowl, grind 1 min/speed 10. Transfer to a bowl and set aside.
  2. Place 100 g water, dried yeast powder, 100 g plain flour, 25 g sugar in mixing bowl, mix 1 min/37°C/speed 2.
  3. Start Fermentation mode/1 h/37°C. Line cupcake moulds (Ø 6 cm) with cupcake cases.
  4. Add 125 g plain flour, 100 g sugar, egg, baking powder, coconut milk and reserved purple riceberry, mix 1 min/speed 6. Pour batter into prepared cupcake moulds and arrange cupcakes in Varoma dish and tray. Clean mixing bowl.
  5. Place 800 g water in mixing bowl, start Kettle mode/100°C.
  6. Set Varoma into position, steam 20 min/Varoma/speed 2.
  7. Carefully open Varoma lid, transfer cupcakes to a serving plate.
  8. Serve warm.

紫黑米发糕食谱
食材

  • 75 克 紫黑米
  • 900 克 水5 克 干酵母粉
  • 225 克 面粉125 克 细砂糖
  • 1 颗 蛋
  • 10 克 发粉
  • 50 克 浓椰浆

 

做法

  1. 将紫米放入主锅,以1 分/速度 10磨碎。倒入碗中并置于一旁待用。
  2. 将100克水、干酵母粉、100克面粉和25克细砂糖放入主锅,以1 分/37°C/速度 2混合。
  3. 启动发酵功能/1 小时/37°C。
  4. 加入125克面粉、100克细砂糖、蛋、发粉、椰浆和备用的紫黑米,以1 分/速度 6混合。将杯子蛋糕纸托(直径6 公分)分布在杯子蛋糕模(直径6 公分)上。将面糊倒入备好的杯子蛋糕模并排列在蒸锅和蒸盘里。清洗主锅。
  5. 将800克水倒入主锅,启动烧水100°C。
  6. 架上蒸锅组,以20 分/Varoma/速度 2蒸煮。
  7. 谨慎地把蒸锅组锅盖打开, 将黑糯米发糕转移至一个盛盘中。
  8. 趁温热时享用。
